REFRESHING STRAWBERRY LEMONADE

I was assigned to bring lemonade to a birthday lunch, so thought I would make it a bit more special and made this. I doubled it using my Breville juicer, so I had pure strawberry juice. I used 4 cups of lemon juice to 2 cups of strawberry juice and that worked well. I also warmed a few cups of water and let the sugar dissolve, added ice to cool, then added the balance of the water.

I also used a mini muffin tray, placed a small strawberry in each, then filled with spring water to use as the ice cubes in a large serving container. Between the beautiful pink color and the strawberry ice cubes, it was a such a pretty presentation well received!

Delicious and very refreshing! The flavor was perfect and our children devoured it. This reminds me of the strawberry lemonade that they make in the steakhouse restaurants.

REFRESHING STRAWBERRY LEMONADE





INGREDIENTS

1 and ½ cups chopped strawberries
1 cup boiling water
½ cup granulated sugar, or any kind of sugar you prefer
1 cup (about 8 lemons) freshly squeezed lemon juice
4 cups cold, filtered water

INSTRUCTIONS
  • Puree the strawberries in a food processor or a blender until pureed. Remove and strain through a fine-mesh strainer if desired, or you can leave the seeds and pulp in. I used half-and-half in mine.
  • In a separate pan or bowl, stir together the boiling water and sugar together. Allow the boiling water to cool for about 5-10 minutes.
  • Pour the cooled water into a pitcher and add in the rest of the cold, filtered water. Stir in the pureed strawberries and the freshly squeezed lemon juice.
  • Serve with ice.
