CREAMY AVOCADO CITRUS SALAD DRESSING - NO CREAM, NO OIL!

This was an amazing dish that my family loved. I made a few adjustments to it - outcome restuarant quality. I grilled shrimp with a little butter and garlic and added the shrimp on top of the salad. It was amazing. Also on a side note, my husband is not a big fan of melons so for his portion I substituted it with tangerine slices.

I actually changed up the dressing recipe and added red wine instead of the vinegar removed the clove garlic and just used cayenne pepper. It was definitely a keeper... I would try it again!


CREAMY AVOCADO CITRUS SALAD DRESSING - NO CREAM, NO OIL!

INGREDIENTS

1 ripe avocado
1/4 c apple cider vinegar
1/4. c. honey
3 T. lime juice
1 clove garlic
1/4 c. cilantro
1/2 small jalepeno (or your preference)
1/4 c. water or more, to thin to preference
Salt and pepper, to taste

INSTRUCTIONS

Add all to food processor or blender and whiz up about a minute or until smooth and creamy. Add a drizzle of water (for salad dressing) to make it thinner. Keep it thicker to spoon on top of fish or chicken or pasta.

AVOCADO LIME SALAD DRESSING

I am not a big dressing person when it comes to salads so I wanted something a little different and with a refreshing taste. I love avocados, so this seemed like a perfect dressing for me.

Absolutely LOVE IT and agree is a nice dip as well. I did add 2 additional garlic cloves because I like the added bite. From a time preparation perspective, you really don't need to cube the avocados if they are ripe, they blend up with no issues. Would highly recommend this recipe to others.



The health benefits alone made me want to try it, but the taste kept me coming back. I've since twisted this recipe into so many unique variations, the possibilities are as limitless as your own imagination.

Creamy Baked Vegan Gnocchi

Seeing that Gnocchi soup is my ultimate choice even though I desperately try to convince myself to try other soups from Olive Garden, I have to say this recipie is by farr better than the Olive Garden. The only thing I can think of is just making sure the gnocchi is boiled till tender before it's added to the soup, seeing that this recepie is a quick one. In love!


Creamy Baked Vegan Gnocchi

Ingredients
16 oz package gnocchi
3 handfuls kale chopped
2 tbsp vegan butter
4 cloves garlic diced
8 oz white wine
12 oz non-dairy milk
1 tsp vegan chicken bouillon*
1/4 cup vegan parmesan
2 tbsp flour
1 small lemon zested
salt & pepper to taste

Instructions
  1. Preheat oven to 400 degrees and coat an 8x8 pan with non-stick spray.
  2. Bring a large pot of water to a boil. Add gnocchi and kale to the pot and cook until gnocchi float to the top (approx. 3 minutes). Drain gnocchi and kale and set aside.
