The Keto diet is relatively new so I want to share my favorite low carbohydrate keto recipe. Why am I on the Keto diet? And you might ask if I buy Keto shake online? My sugar addiction is out of control and I need to cut carbohydrates to curb addiction. I am also a pear-shaped. This means I carry all the fat on my buttocks, hips and thighs. It takes God's actions (or surgeons) to remove this type of fat. With the keto diet I spend all the glycogen deposits in my body so that it will start burning stubborn fat while maintaining muscle. INGREDIENTS
3-4 boneless, trimmed skinless chicken breasts
1 8 ounce cream cheese package, softened
1 4 ounces can be chopped green chili (I prefer Old El Paso)
1 cup of monterey jack cheese, grated
1/2 tsp garlic powder
1/4 tsp cumin
1/4 tsp salt
1/4 tsp pepper
INSTRUCTIONS
Preheat the oven to 375F.
In a medium bowl, mix cream cheese, garlic powder, cumin, salt and pepper until mixed. Then stir the green chili and stir until well blended.
Place the chicken breast flat on a baking sheet. Cover chicken breast with green chili mixture. Then add jack monterey cheese.
Bake on the middle shelf for 35-45 minutes or until the chicken is cooked and the juice is clear.
Serve hot on Spanish rice, green vegetables, tortillas or mashed potatoes. Enjoy!
NOTE
You can cut the chicken in half, cut it, or use chicken tenderloins instead of full chicken breasts to make serving easier. Cooking time can be reduced.
Leftovers can be stored in airtight containers for 3-4 days in the refrigerator or in the freezer for up to a month.
