HAM AND CHEESE EGG MUFFINS

Have you had a nice weekend? We have a busy weekend! Nothing special, just running small factory things. I was amazed at how the big family did it because I felt like tracking the schedule of three children and two many adults for us. I keep forgetting obligations and everything falls through the gap. So for you with a bucket full of kids, my hat is for you. I don't know how you do it.

However, I know that many of you, busy parents, are looking for prey for easy breakfast recipes that will keep your children full throughout the day. This easy egg muffin recipe is perfect! It comes together with just a few simple ingredients, it takes a little time to prepare, and this tin muffin egg is very easy to freeze and reheat later.

Ingredients
  • 12 large eggs
  • 1/2 cup milk (I used skim)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 3/4 cup shredded cheddar cheese divided
  • 8 ounces ham steak cubed
  • 2 green onions sliced thin

Instructions
  1. Preheat your oven to 350 degrees. Spray a muffin tin heavily with cooking spray. (Please note that a silicon muffin tin works best.)  Set aside.
  2. In a large bowl, whisk together the eggs, milk, and spices.
  3. Stir in 1/2 cup of the shredded cheddar cheese, ham, and the green onions.
  4. Fill the muffin tins.  Top with the reaming 1/4 cup cheese.

  5. Bake for 25 to 30 minutes or until the eggs pull away from the side of the muffin tin and are set in the middle.
