HASSELBACK CHICKEN RECIPES
I have been on chicken to "kick" dinner lately! And I make sure I take photos and write down the ingredients as I continue so I can blog about recipes for you too. Today I share amazing recipes for Hasselback Chicken filled with Mozzarella, Tomato and Basil.
WHAT IS THE WORK CHICKEN?
The term Hasselback has been around for a while; usually for potatoes where you make a gap in potatoes, like an accordion, be careful not to cut potatoes along the way. Then you fill the gap with meat and cheese.

Now, people make everything Hasselback ... apples, sweet potatoes and even chicken! I haven't tried Hasselback potatoes; Are you leaving soon? And I know my child will really like the recipe because he likes smoked meat.

You don't need much to prepare this recipe, but here is a list of my favorite kitchen utensils:
Cutting Board - I like plastic that is easily sterilized with bleach after preparing chicken.
Knife Set - a good sharp knife is very important for cutting gaps in chickens.
Rectangular Baking Dish - pretty enough to be brought to the table!
HOW TO MAKE CLOTHING CHICKEN

Material:
- 2 boneless chicken breasts
- 8 to 10 slices of mozzarella cheese
- 5 to 6 grape tomatoes; sliced in half
- Fresh basil leaves
- 2 teaspoons of Italian spices - or your favorite spice! Garlic powder, fresh garlic or even oregano is also good.
- Salt and pepper
- 2 teaspoons of olive oil
INGREDIENTS
- 2 boneless skinless chicken breasts
- 8 to 10 mozzarella cheese slices
- 5 to 6 grape tomatoes; sliced in half
- Fresh basil leaves
- 2 teaspoons of Italian seasoning
- Salt and Pepper
- 2 olive oil teaspoons
INSTRUCTIONS
Place the chicken breasts on a cutting board. Using a sharp knife, cut slits across the chicken breast about 3/4 of the way through being careful not to cut all the way through.
Depending on the size of your chicken breast, you're going to want around 6 to 8 slits per chicken breast.
Stuff each slit with a slice of mozzarella cheese, half a grape tomato and a basil leaf.
Place the chicken breasts in a baking dish that has been coated with non-stick baking spray.
Brush each chicken breast with olive oil.
Sprinkle each breast chicken with salt, pepper and Italian seasoning.
A preheated 400 degree oven for 30 minutes or until the internal temperature of the chicken reaches 160 degrees.
NOTES
You can also drizzle a little balsamic vinegar on the cooked chicken right before serving.
