EASY Keto Casseroles the whole family will love to eat!

Step # 1: Preheat the oven to 325 F and lubricate the 8 × 8 casserole plate ". (I use coconut oil.)

Step # 2: Sprinkle half of the crushed pork skin * at the bottom of the casserole cup, completely covering the bottom. Drizzle 3 tablespoons of melted butter on top. (* The easiest way to destroy pig skin is to put it in a large Ziploc bag and destroy it using a rolling pin.)

Step # 3: In a medium sized bowl, combine keto thick soup, sour cream, chicken broth, diced chicken breast, and diced smoked meat. (You can use pork or turkey. I use turkey for these photos because that's what I had that day, but I also made it with pork. Both taste fantastic!)

DO NOT use raw chicken breast or bacon in this recipe! They MUST be cooked first.

Step # 4: Add the mixture to the casserole plate, evenly covering the pork skin.

Step # 5: In a small bowl, mix the remaining pork and melted butter.

Step # 6: Sprinkle the mixture in a casserole plate, evenly covering the top.

Step # 7: Bake casseroles for 30 to 35 minutes until the pork skin forms good skin.

How to Serve Crusted Keto Flour Chicken Casserole

Serve as a main dish or side dish.
It is paired extraordinarily with a side of low carbohydrate vegetables.
How to Measure Your Keto Chicken Casserole Macro Perfectly
This is a moist casserole. Heat from the oven, it is rather difficult to measure portions properly. If maintaining your macro is very important to you, here are my suggestions:

Cool the casserole before cutting it, then cut each part. Reheat before serving (or not ... it also feels very cold!). I use a rounded casserole plate for more beautiful photos, but square plates will make this easier.
Weigh your casserole before cooking. After cooking (and cooling the casserole!), Weigh everything again. Reduce the weight of the casserole cup and divide by eight to get the right weight of each serving.
The good news is that keto chicken casseroles contain very low carbohydrates (just over 1 g per serving), so parts that are not easily damaged won't damage your carbohydrate intake.

  • 1 tbsp coconut flour
  • 1/2 cup chicken stock
  • 1/2 cup unsweetened almond milk
  • 1/4 tsp xanthan gum
  • 1 tsp salt

  • 6 oz crushed pork rinds plain (unsalted and unflavored)
  • 7 tbsp melted salted butter divided

  • 7 oz sour cream
  • 1/3 cup chicken stock
  • 2 cups cooked chicken breast diced
  • 4 slices cooked bacon diced

 Instructions

How to Make Keto Condensed Cream of Chicken Soup

In a small saucepan over medium-low heat, melt butter.

Add coconut flour and mix. Stir mixture quickly until it thickens.

Add chicken stock and turn heat up to medium. Whisk to incorporate, then add almond milk and whisk. Finally, add xanthan gum, salt, and pepper.

Turn up the heat slightly to bring the mixture to a low boil for 2 minutes.

Remove from heat and let sit for at least 5 minutes before using it in your casserole (use this time to do other steps, like crush your pork rinds, dice chicken, etc).

The condensed soup will thicken further as it cools. Use immediately or store in the fridge for up to a day.

How to Make Keto Buttery Chicken Casserole

Preheat oven to 325 F and grease an 8x8” casserole dish. (I used coconut oil.)

Sprinkle half of the crushed pork rinds* on the bottom of the casserole dish, fully covering the bottom. Drizzle 3 tbsp of the melted butter on top. (*The easiest way to crush pork rinds is to stick them in a large Ziploc bag and crush them using a rolling pin.)

In a medium-sized bowl, combine condensed soup, sour cream, chicken broth, diced cooked chicken breast, and diced cooked bacon.

Add the mixture to the casserole dish, evenly covering the pork rinds.

In a small bowl, combine remaining pork rinds and melted butter.

Sprinkle the mixture in the casserole dish, evenly covering the top.

Bake casserole for 30 to 35 minutes until the pork rinds have formed a nice crust.


Notes

Do NOT use raw chicken breast or bacon in this recipe! They MUST be cooked beforehand.
You can use pork or turkey bacon. Nutrition facts are calculated using pork bacon.
