PINK PEPPERMINT PATTIES

I made these for Valentine’s Day and they turned out great. Not too sweet and I love that you can do the mint to your liking. Yummy! These cookies are so beautiful, and a great for stocking stuffers! So fun for upcoming Valentines Day!

Homemade Pink Peppermint Patties are a sweet treat for your Valentine! They're so easy to make and they taste better than any store bought mint patty!


PINK PEPPERMINT PATTIES

Servings: 40 mints

Ingredients
  • 1/4 cup softened butter
  • 1/4 cup agave or honey*
  • 1-2 tsp peppermint extract**
  • 3 cups powdered sugar
  • 3-4 drops pink food coloring
  • 2 cups dark dipping chocolate***
  • pink & white melting chocolate & Valentines sprinkles


Instructions
  1. Combine butter, agave, extract and powdered sugar in a mixing bowl. Mix with an electric mixer for about 3 minutes, until ingredients are well combined and are holding together. Add pink coloring and mix again. If mixture appears too dry, add a little water. If it's too sticky, add more powdered sugar 2-3 TBSP at a time.
  2. Remove dough from bowl and break off about 2 teaspoon-sized sections. Roll into a ball and gently flatten with your hands. Put patties down on a pan lined with wax or parchment paper. Once all patties are made, place pan in the freezer for 30 minutes.
