Instant Pot Ramen Recipe

Instant Pot Ramen Recipe

This Instant Pot Ramen is delicious, with chicken, eggs and vegetables in a hearty chicken soup. Spice up the ramen noodles with hot oil for an extra kick.

Ingredients

  • 1 lb. chicken tenders or chicken breasts
  • salt
  • ground black pepper
  • 1 1/2 tablespoons vegetable oil
  • 4 cups low-sodium chicken broth
  • 2 cups water
  • 4 eggs
  • 3 packages ramen noodles, discard the seasonings
  • 8 oz bok choy, stem removed and sliced into pieces
  • 1 1/2 tablespoons soy sauce or Japanese soup base (add more to taste)
  • 4 stalks scallion, white parts into 2-inch length and green part into rounds
  • black and white sesame, optional
  • chili oil 

Instructions

  1. Season the chicken with salt and ground black pepper on both sides of the chicken. 
  2. Turn on the Saute mode on the Instant Pot. As soon as the pot is fully heated and hot, add the oil. Pan sear the chicken until both sides turn brown. 
  3. Add the chicken broth, water, and the white parts of the scallions. Cover the pot and select Manual and set to High pressure for 10 minutes.
  4. Meanwhile, make the ramen eggs. In a small pot, add cold water. The water level must be deep enough to cover all eggs. When the water boils, add the eggs and cook for 7 minutes. When your eggs are done cooking, plunge them into ice water and leave to sit for 5 minutes. Carefully peel off the shells, while the eggs are still in the water. Make sure you remove the membrane covering the egg white. Slice the eggs into halves. Set aside. 
  5. When the Instant Pot beeps, turn to Quick Release. When the valve drops, remove the lid carefully. Discard the white parts of the scallions and scoop out the chicken. Let cool and shred the chicken using two forks.
  6. Turn to Saute mode and as soon as the soup boils, add the chicken and ramen noodles.  Make sure you push the ramen noodles down so they submerge in the soup.
  7. As soon as the ramen noodles becomes soft (no longer in a block), add the bok choy and soy sauce. Stir the ramen around. Cancel Saute mode and remove the pot. DO NOT OVERCOOK the ramen as the noodles will continue to cook even after you remove the pot. Divide the ramen noodles into four bowls. Top with ramen eggs, chopped scallions, sesame seeds (if using), and dashes of chili oil. Serve the ramen immediately, do not keep in the pot as they will turn soggy.

If you don't have an Instant Pot, you can make this ramen noodle soup on a stove pot. Just use a regular pot to make the recipe.

For the seasoning, please use Japanese Bonito-Flavored Soup Base such as Mizkan, if you have it. If not, use light soy sauce.

I generally have a couple of packs of dry ramen noodles in my wash room for crisis lethargic dinners like this one. You know, now and again you are simply too tired to even think about cooking. I have been there and, actually, I am there all the time… . The appropriate response is fast and simple veggie lover ramen.

INGREDIENTS :
  • 1 tablespoon sesame oil
  • 3 teaspoons ginger, grated
  • 4 teaspoons garlic, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons mirin or rice wine vinegar
  • 4 cups vegetable stock (or chicken stock)
  • 1/2 cup fresh shiitake mushrooms
  • 2 eggs
  • 1 cup baby spinach
  • 2 (3 oz) packs dried ramen noodles
  • hot sauce, to taste (optional)
  • 1/2 cup green onions/scallions, sliced
  • 1 cup shredded carrots
  • sesame seeds (optional)


INSTRUCTIONS :
  1. Heat the sesame oil in a large pot over medium heat. Add the garlic and ginger and cook for a couple minutes until soft and fragrant. Stir in the soy sauce and mirin and cook for another minute. Add the stock and bring to a simmer. Simmer for 5 minutes.
  2. Add the mushrooms and simmer for another 10 minutes.
  3. Meanwhile, bring a small pot of water to a boil. Add the eggs and cook for exactly 7 minutes for a slightly runny yoke or 8 minutes for a soft yolk. Remove eggs from the pot and place in a bowl of ice water to stop the cooking process. After a few minutes, peel the shells off carefully and slice the eggs in half, lengthwise. Set aside.
  4. Bring another pot of water to a boil. Add the spinach and cook for about a minute, until just wilted. Remove from pot and run under cold water to stop the cooking process. Drain and set aside.
  5. Add ramen noodles to stock mixture and cook 2-3 minutes or according to package instructions. Add some hot sauce, to taste (optional).
  6. Divide the soup into 2 large bowls.
  7. Top with an egg, spinach, carrots and green onions. Sprinkle with sesame seeds (optional) and serve immediately.

Thai Zucchini Noodle Salad with Cabbage Recipe

Ingredients :

  • 2 zucchini cut into noodles using spiralizer*
  • 3 carrots cut into noodles using spiralizer*
  • 1 cup cabbage thinly sliced
  • ¼ cup peanut butter smooth
  • 3 Tbsp. soy sauce gluten-free
  • 2 Tbsp. lime juice
  • 1 Tbsp. agave nectar or honey
  • 1 tsp. sriracha sauce
  • 1-2 Tbsp. water as needed
  • ¼ cup cilantro finely chopped
  • ¼ cup peanuts coarsely chopped

Instructions :

  1. In a large bowl combine spiralized zucchini noodles, carrot noodles, and sliced cabbage.
  2. In a separate medium-sized bowl, heat peanut butter up in the microwave for 15-30 seconds to ensure easier mixing.
  3. Add soy sauce, lime juice, agave nectar, and sriracha sauce to the bowl of peanut butter. Whisk to combine. Add water, as needed, until a smooth, salad dressing-like consistency is reached.
  4. Add peanut sauce, cilantro, and peanuts to the bowl of veggie noodles and toss to combine.
  5. Refrigerate for 15-30 minutes. Serve chilled and enjoy!

Crockpot Chicken Noodle Soup

Ingredients

  • 3 carrots, peeled and sliced into coins
  • 4 tsp. sprigs fresh rosemary
  • 1 1/2 lb. boneless skinless chicken breasts
  • 1 large onion, chopped
  • Kosher salt
  • 2 stalks celery, sliced
  • 4 tsp. sprigs fresh thyme
  • 8 oz. egg noodles
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 10 c. low-sodiúm chicken broth
  • Freshly groúnd black pepper

Instructions

  1. In a slow cooker, combine chicken, onion, carrots, celery, thyme, rosemary, garlic, and bay leaf and season generoúsly with salt and pepper. Poúr in broth.
  2. Cover and cook on low, 6 to 8 hoúrs. Remove chicken from slow cooker and shred with two forks. Discard herbs and bay leaf. Retúrn chicken to slow cooker and add egg noodles.
  3. Cook on low, covered, úntil al dente, 20 to 30 minútes.
