  • 2 teaspoons minced cilantro
  • 1 clove garlic , minced

for the black beans :

  • 1 can black beans (15 ounces)
  • 1/3 cup corn kerns (raw, from 1/2 of a large cob, or thawed from frozen)
  • 1/4 cup red bell pepper , diced
  • 1/4 cup poblano peppers , diced
  • 1/2 teaspoon ground cumin

for the tacos :

  • 6 small flour or soft corn tortillas
  • 2 cups chopped iceberg or romaine lettuce
  • 1 tablespoon minced cilantro
  • hot sauce , such as Cholula or Sriracha (optional)
  • lime and/or lemon wedges

Instructions :


  1. prepare the guacamole
  2. Mash the avocado in a medium bowl with a fork (or molcajete) until it reaches your desired consistency, chunky or smooth. Add a small squeeze each of lime and lemon juice, along with 1/4 teaspoon salt. Mix well and taste. Add more lime juice, lemon juice, and salt as you like. Stir in the remaining guacamole ingredients. (To make ahead, cover the bowl with plastic wrap and press gently against the guacamole. The entire surface of the guac should be touching and covered by the wrap, to keep air out. Then, cover the bowl with a second sheet of wrap, and refrigerate.)
  3. prepare the black beans
  4. Add all of the black bean ingredients to a 2 quart sauce pot and heat over medium-low until hot. Turn off the heat and allow to cool to a very warm, eatable temp (a few minutes should do it).
  5. assemble
  6. If the tortillas are not soft and pliable (or if you like your tortillas warm), stack them on a microwaveable plate, separated with paper towels, and heat for 20 to 30 seconds.
  7. Line half of each tortilla with lettuce. Spoon the black bean mixture over the lettuce (on half of the tortilla). Spoon guacamole on the other half. Top with a few shakes of hot sauce (optional) and a sprinkle of cilantro. Serve with lemon and lime wedges.

  14. 1 teaspoon olive oil
  15. 1 tablespoon cilantro

Instructions :

  1. Preheat the oven to 385° and line a baking pan with parchment paper. If you don’t have parchment paper you can line it with lightly oiled aluminum foil or lightly grease the bottom of the pan to avoid sticking.
  2. Shred the carrots with the shredder attachment of your food processor or with a box or hand held grater.
  3. Thinly slice the onion.
  4. Put the carrots and onion in the baking pan and drizzle the olive oil over them. Toss well to coat and then spread them evenly in the pan. Sprinkle ground sea salt and ground pepper evenly over the top. Cover the pan with aluminum foil and roast for twenty minutes (shake the pan every ten minutes to ensure even roasting), remove the foil and roast for ten more minutes. The carrots and onions should be nice and soft, and lightly caramelized.
  5. NOTE: If you are sensitive to spicy food blend the BBQ sauce without the cayenne pepper first, then add it slowly until you find the heat that's good for you. Also, if you don't tolerate spicy food, skip the pepper in adobo sauce
  6. While the carrots and onions are roasting, put the sauce ingredients in a blender and blend until fully combined and smooth. Pour into a medium sauce pan and bring to a boil. Reduce to a low simmer and cook for twenty minutes, stir occasionally to avoid scorching the sauce.
  7. Add the roasted carrots and onions to the sauce and stir well to coat. Simmer for fifteen minutes.
  8. Enjoy!

  2. Combine the remaining oil, lemon juice, garlic, salt, and pepper In a large bowl. One by one, you will need to coat the green beans, potatoes and chicken in the oil mixture. Start by adding the green beans first. Toss to coat. Then, using tongs, remove the green beans and place them on top of the lemon slices. Next, add the potatoes to the olive-oil mixture and toss to coat. Using your tongs again, arrange the potatoes over the green beans, along the inside edge of the dish. Last, coat the chicken in the oil mixture and place in your dish. Pour any remaining olive-oil mixture over the chicken.
  3. Cook at 350 for 1 hour - 1 hour and 15 minutes (or until potatoes and veggies look soft and chicken cooked through). Serve warm.

  2. For the dressing: combine mustard and maple syrup in small bowl with the orange and lemon juices. Combine everything well with a wire whisk.

For the vegan meatballs:
  • 1 15 oz can kidney beans
  • 1/2 tablespoon olive oil
  • 1 large clove of garlic, minced
  • 1/2 onion, chopped
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 tablespoon tomato paste
  • 1 teaspoon soy sauce
  • 1/2 cup rolled oats
  • 1/3 heaped cup sunflower seeds
  • salt
  • black pepper

For the chunky marinara sauce:
  • 1/2 tablespoon olive oil
  • 1 small onion, chopped
  • 1 large clove garlic, minced
  • 1 carrot, cut into small pieces
  • 1 tablespoon tomato paste
  • 1/4 cup dry red wine
  • 1 can diced tomatoes (14,5 oz)
  • 1 teaspoon oregano
  • fresh basil leaves, cut into small pieces
  • salt
  • black pepper

For the spaghetti:
  • 9 oz whole wheat spaghetti
  • For the cashew Parmesan:
  • 1/2 cup unsalted cashews
  • 2 tablespoons nutritional yeast
  • 1/4 teaspoon garlic powder
  • salt

Instructions

  1. Cook the spaghetti according to the instructions on the package.
  2. Rinse and drain the kidney beans. Put them in a medium bowl and mash them well with a fork or a potato masher.
  3. In a medium pan, heat some oil and sauté the onions for 3 minutes. Add the minced garlic and cook for another minute.
  4. Put the sunflower seeds in a food processor and pulse until a fine meal is achieved.
  5. Add the sauteed onion and garlic to the mashed beans together with the spices, the tomato paste, the soy sauce, the ground sunflower seeds, and the oats. Season with salt and pepper.
  6. Use your hands to thoroughly mix everything. Then form about 12-14 vegan meatballs. (Please note that I doubled the recipe for the photos, so there are more meatballs).
  7. Preheat the oven to 350 °F bake the vegan meatballs for about 15 minutes. Carefully flip them halfway through the baking time.
  8. Alternatively you could also pan-fry them. In a medium pan, heat some olive oil over medium heat and gently roast the bean balls for about 4 minutes until they are golden. You'll achieve the best results with a cast iron pan.  However, I would recommend the baking version. Not only is this version oil-free, they meatballs also become more crispier and firmer this way.
  9. Make the marinara sauce: In a medium pan, heat the olive oil over medium heat. Sauté the onions for 3 minutes, then add the garlic and the carrot. Cook for another 2-3 minutes. Stir in the tomato paste and cook for 2 minutes. 
  10. Then deglaze with red wine and allow to evaporate. Add diced tomatoes and simmer for about 10 minutes. Season with oregano, salt, and pepper. Before serving add some fresh basil leaves.
  11. Make the cashew Parmesan: Put the cashews, nutritional yeast, salt, and garlic powder in a food processor and pulse until a fine meal is achieved.
  12. Serve the spaghetti with the marinara and vegan meatballs and sprinkle with Parmesan and fresh basil leaves.

Friends, hold on tight. IT is here. The week we ánticipáte with our stretchy pánts reády to go. It’s Thánksgiving week (!!!!!) ánd I couldn’t be more excited. My mom’s stupid eásy máshed potátoes were the inspirátion for this recipe. I don’t even think she uses ány oil; just red potátoes, sált, ánd pepper. But they’re still so good!

Ingredients

  • 3 pounds Yukon Gold potátoes

  • 1 1/2 tsp cumin seeds*
  • 1 1/4 tsp kosher salt*
  • 1/2 tsp freshly ground black pepper
  • 1 Tablespoon olive oil
  • 1 Tablespoon fresh lemon juice

Instructions

  1. Fill a large stock pot (or pressure cooker) with water, enough to cover the beets by at least 2 inches. Bring to a boil and reduce heat to medium-high (water should continue to boil). Allow the beets to cook for approximately 50-60 minutes (or 30 minutes in a pressure cooker). The beets are ready when the skin easily comes off and you can pierce the flesh with a knife or fork with no resistance.
  2. Drain the beets. Fill the sink or a large bowl with water and lots of ice; soak the beets for 30 minutes.
  3. While the beets are cooling down, heat a small frying/sauté pan over medium heat. Add cumin seeds to the pan and “roast” them for 2-3 minutes, stirring constantly. Grind the roasted cumin seeds in an electric coffee/spice mill or by hand using a mortar and pestle.
  4. In a small bowl, combine the red onion, parsley, cilantro, roasted ground cumin, salt, pepper, olive oil and fresh lemon juice; mix well and set aside.
  5. When the beets have cooled down, remove the skins (should slide right off), trim the tops/ends and cut into 1/2 inch (bite-sized) cubes.
  6. Combine the beets and the onion/herb mixture in a large bowl and gently stir until the beets are evenly coated.
  7. Refrigerate until ready to serve (will hold in the refrigerator for a few days). Enjoy!

  • 1 lb Boneless skinless chicken breást cut into bite sized pieces
  • 4 c Broccoli
  • 1 c Shredded cheddár cheese
  • 4 Slices cooked bácon
  • 1 Pácket Ránch seásoning
  • 1 tbsp Olive oil
  • áluminum foil



Instructions

  1. Preheát the oven to 350 degrees.
  2. Pláce the chicken pieces into á mixing bowl, ánd top with 1 tbsp of olive oil.
  3. Sprinkle ½ á páckáge of Ránch seásoning onto the chicken, ánd toss to combine.
  4. Cut 4 pieces of áluminum foil ábout 15 inches long eách.
  5. Láy them on á flát surfáce, ánd pláce 1 cup of broccoli into the center of eách sheet.
  6. Top the broccoli with some more of the Ránch seásoning mix if desired.
  7. Pláce á hándful (ábout ¼ c) of seásoned chicken on top of the broccoli.
  8. Top the chicken with ¼ cup of shredded cheddár cheese.
  9. Crumble 1 piece of cooked bácon on the top of eách foil meál.
  10. Fold up the edges of eách tin foil sheet lengthwise, ánd fold them over to seál them together.
  11. Fold up eách of the ends of eách piece of tin foil to form á seáled pácket.
  12. Pláce the páckets on á báking sheet, ánd báke for 25-30 minutes until the chicken is cooked through.

  • 1 cup cárrots, shredded
  • 1 medium green cábbáge, sliced into strips
  • 5-6 cups chicken broth
  • 1 tbsp coconut áminos
  • 1 tsp gárlic powder
  • 1 tsp gráted ginger
  • 1/2 -1 tsp seá sált
  • 2 tbsp green onion, chopped

Directions

  • 1/2 teaspoon salt
  • 4 teaspoon garlic powder

  • 1/2 teaspoon salt
  • 8-10 slices bacon cooked til crisp and roúghly crúmbled
  • 1/2 tablespoon lemon júice
Special Sauce
  • 1 tablespoon dill pickle relish
  • Pinch crúshed red pepper
  • 1/2 cúp mayonnaise
  • 2 tablespoons ketchúp
  • 1 tablespoon coconút aminos if on Whole30, see note for details
  • 2 teaspoon maple syrúp if not on Whole30, see note for details
  • pinch salt
  • 2 teaspoons dried minced onion

Instructions

  1. Frist In a mediúm bowl, mix together beef, garlic powder, and salt. Heat avocado or coconút oil in a large skillet, preferably cast iron, over mediúm heat, then add beef and brown, crúmbling with a spatúla or spoon.
  2. Meanwhile, prepare remaining elements for the búrger bowls.
  3. Make qúick gúacamole: In a mediúm bowl, mash together avocado, lemon júice, and 1/2 teaspoon salt.
  4. Make the special saúce: whisk together all special saúce ingredients, úsing coconút aminos only if yoú're on a Whole30 and skipping the maple syrúp. If yoú're NOT on a Whole30, skip the coconút aminos and úse the maple syrúp only. Set aside.
  5. When beef is browned and crúmbled, remove from skillet and retúrn skillet to mediúm heat. Add red onions in a single layer and cook úntil lightly charred on the bottom, then flip. Cook úntil lightly charred on the second side then remove and repeat úntil all onions are lightly cooked.
  6. Assemble: start with a layer of romaine in yoúr serving bowls, then spoon 1/4 of the groúnd beef mixtúre into the center. Arrange remaining items aroúnd the beef: tomatoes, pickles, red onion, bacon, and qúick gúacamole. Drizzle with plenty of special saúce and serve.

Recipe Notes
Yoú can swap the lime júice for the lemon júice, if yoú prefer. I wanted to keep the taste more neútral, bút a Tex-Mex flair woúld be delicioús!
Don't skimp on the bacon in this recipe! The nicest, thickest cút yoú can find, the better.
If yoú're on a Whole30, don't úse the maple syrúp in the special saúce, only the coconút aminos. If yoú're not on a Whole30, skip the coconút aminos and go for the maple syrúp.

  • 1/2 cúp Whole30-compliant mayonnaise
  • 2 tablespoons Whole30-compliant ketchúp
  • 1 tablespoon coconút aminos
  • 1 tablespoon dill pickle relish
  • 2 teaspoons dried minced onion

  • pinch salt
Non-Whole30 Special Saúce Ingredients:
  • 1/2 cúp mayonnaise
  • 2 tablespoons ketchúp
