Spicy Cajun Asparagus and Sausage Skillet

Healthy eating does not mean you have to skip the flavor, and this Cajun sausage and sausage pan offers the flavor. Loaded with tons of vegetables and tasty spices, this sausage pan is a quick and easy evening meal that you can prepare in about 40 minutes.

Your family will not even realize that you are eating a healthy recipe when you serve them this burst of Cajun flavor.

TIPS FOR MAKING THIS RECIPE:

Be sure to whiten the asparagus. I know it probably seems like just one extra step and an extra dirty pot. But if you do not bleach it first, it takes a long time to cook in the pan and by then it has gotten soaked and everything else has gotten soaked and it really is not the same.

Do not pinch the potatoes. It is very difficult to avoid stirring and constantly pushing the pan. But try to contain yourself. Stirring the potatoes constantly will only make them take longer to cook and degrade their shape.

If the Cajun seasoning is too spicy for you or your little ones, they can reduce the amount. If you do not have / do not like the Cajun seasoning, this pan is also delicious with the Italian seasoning. Feel free to adapt to your personal tastes and those of your family.

While it's not essential, I'm obsessed with cooking in my cast-iron skillet. It really helps you to have a great experience in everything. Not only meat! I have included a link to the one I use below. But sometimes you can find the old ones in the flea markets!

The ingredients

  • 1 bunch of chopped asparagus in 2 "pieces
  • 2 cups of water
  • 4 red potatoes in cubes
  • 2 carrots cut into 1/4 "pieces
  • 1 green pepper cut in cubes
  • 1/2 medium yellow onion cut into cubes
  • 1 package / 14 oz smoked sausage cut into 1/2 "pieces
  • 2 Tsp Cajun Seasoning
  • 1/2 tablespoon of salt
  • 1/2 teaspoon of black pepper

Instructions

  1. Prepare all the ingredients by dicing and chopping all the vegetables and the sausage. Bring the 2 cups of water to a boil in a medium skillet.
  2. Add the chopped asparagus to the boiling water and adjust the timer for 5 minutes. While the asparagus is boiling, add oil to a skillet over medium heat and add potatoes and add potatoes and carrots in a single layer.
  3. Once the asparagus has been boiled for 5 minutes, they have become a bright green draining pot and are reserved. Let the potatoes and carrots cook for 15 minutes or until they begin to soften.
  4. Push the potatoes and carrots to the edges of the pan and add the onions, peppers and sausages to the pan. Add the seasoning to the pan and cook for an additional 10 minutes or until the onions have softened and the sausage has browned.
  5. Add the asparagus to the pan and mix all the ingredients well so that all have been covered evenly in the seasoning. Serve hot.

Recipe notes
The amount of seasoning can be adjusted to taste if it is too spicy.
